Details
We harvested the grapes for this wine during the cool evening hours. Grapes were then brought to the winery, destemmed, and gently crushed before being fermented at temperatures of between 88°-92°F. This warmer fermentation served to further concentrate flavors and extract intense color from the skins. We co-ferment Gewurztraminer with some of our Pinot Noir for added complexity, and to add hints of spice and rose to the aroma.
