Our Dark Horse Cabernet Sauvignon is big and bold, this deeply colored wine opens with the aroma of fresh coffee, followed by blackberry jam, toasted oak and a hint of dried herbs. The blackberry jam character carries through to the mouth, with a well structured, rich mouthfeel and notes of dark chocolate and cinnamon.
Details
We chose to harvest the grapes for our Cabernet during the cool morning hours. Each lot is kept separate throughout the winemaking process. Our winemaker kept a close eye on each lot and then brought them together during the blending process. Some of our Cabernet lots spend as much as 28 days on skins to drive complexity and a rich mouthfeel. The resulting wine is richly layered and complex.
