About

Fischer & Wieser is a family-owned specialty food company proudly rooted in Fredericksburg, at the heart of the Texas Hill Country. What began as a humble roadside fruit stand has grown into a globally recognized brand guided by faith, family spirit, and a passion for culinary creativity. With a mission of Creating Flavorful Experiences That Make People Happy, the company is committed to crafting premium foods that bring people together.

Founding Story

In 1969, educator and entrepreneur Mark Wieser began selling homemade jams and jellies at a roadside fruit stand called Das Peach Haus, using peaches from his family orchard. In 1979, high school student Case D. Fischer joined the team, later becoming Wieser's business partner in 1986 while attending Texas A&M University. Their partnership transformed the business, leading to the creation of The Original Roasted Raspberry Chipotle Sauce®, which won a NASFT Outstanding New Bestseller in 1997 and put the company on the national stage.

Case D. Fischer, co-founder and CEO of Fischer & Wieser Specialty Foods, was inducted into the Specialty Food Association Hall of Fame in 2025, honoring his more than four decades of leadership in the industry.

Case’s journey on the farmstead began in 1979 in the orchards of Fredericksburg, Texas, working alongside mentor Mark Wieser at Das Peach Haus. That early experience inspired the launch of Fischer & Wieser, which grew from a local farm stand into an internationally recognized brand. Under Case’s leadership, the company pioneered innovations like The Original Roasted Raspberry Chipotle Sauce® and expanded into retail, foodservice, private label, and co-packing—all while remaining rooted in artisanal quality.

A proud family business, Fischer & Wieser now includes the next generation of Fischers in leadership roles. Case is also known for mentoring up-and-coming food entrepreneurs and serving on multiple Specialty Food Association committees and its board of directors.

In his hometown of Fredericksburg, Case has served as Chairman of the Admiral Nimitz Foundation and President of both the Chamber of Commerce and Shopkeepers Guild. He continues to champion innovation, community, and excellence in food.

Mark Wieser

Founder & Chairman of the Board

Mark Wieser is a native of Fredericksburg, Texas, and the founder behind Fischer & Wieser (formerly Das Peach Haus®). In 1969, he launched Das Peach Haus as a humble roadside fruit stand, selling peaches grown on his parents’ orchard.

Mark’s connection to the land runs deep: his father planted the family orchard in 1928, and his mother crafted the preserves that would become the brand’s foundational product.

In 1986, Mark formalized his partnership with Case D. Fischer to found Fischer & Wieser Specialty Foods, growing the business from a stand into an internationally distributed line of more than 150 handcrafted specialty foods.

A graduate of Texas A&M University, Mark has also served as a beloved teacher, historian, and former Judge of Gillespie County. Today, he devotes his time to writing, painting, and tending the farm—the pursuits he cherishes most. He continues to lead the organization as Chairman of the Board.

Under his guidance, Fischer & Wieser has evolved into a culinary destination at the F&W Farmstead in Fredericksburg, where guests can engage with cooking classes, sip Dietz Distillery cocktails, taste F&W products, book on-site lodging, and experience the company’s Texas Hill Country heritage firsthand.

City Lifestyle - Sep 29, 2025 Rooted in Flavor "Fischer & Wieser began in 1969 when Mark Wieser opened a peach stand in Fredericksburg, Texas, selling orchard fruit and his mother’s homemade preserves. What started as a humble roadside shop grew into Das Peach Haus, and later into a national specialty foods company. In 1979, Case D. Fischer joined, and together with Wieser’s family, they expanded into preserves, sauces, and award-winning innovations—most notably the Roasted Raspberry Chipotle Sauce, which gained national acclaim in the 1990s. Despite challenges like failed peach harvests, the company thrived by diversifying and staying rooted in faith, family values, and quality craftsmanship. Today, the next generation—Dietz, Elle, and Simon—lead operations across wine, retail, and hospitality, while the family continues to expand into distilling, cooking schools, and global-inspired product lines. Fischer & Wieser remains headquartered near its original peach stand, producing small-batch goods with strict quality standards. Their commitment to community, integrity, and customer experience has shaped both the company and Fredericksburg’s rise as a food and tourism destination. At its heart, Fischer & Wieser is more than a food brand—it’s a family-driven legacy built on faith, creativity, and service."
Texas A&M Foundation - Aug 20, 2025 The Sweet and Spicy Story of How a Peach Stand Became an Internationally Known Aggie Brand "Fischer & Wieser Specialty Foods traces its roots to Mark Wieser ’63, who grew up selling peaches from his family’s Fredericksburg orchard. Inspired by his mother Estella’s preserves and his father J.B.’s push to shift local farmers from cotton to peaches, Mark combined teaching with farming before opening Das Peach Haus in 1969. The business transformed when a young Case Fischer ’87 joined in 1979. Guided by Mark’s creativity, Case’s vision, and later Deanna Fischer ’88’s leadership, the company grew from a roadside peach stand into a nationally recognized specialty food brand. Their breakthrough came in 1996 with the Original Roasted Raspberry Chipotle Sauce, which won a prestigious sofi Award and remains their bestseller nearly 30 years later. Today, Fischer & Wieser is a family-driven enterprise anchored by faith, quality, and integrity. The company produces more than 150 products, attracts over 150,000 annual visitors to its Fredericksburg farmstead, and continues to innovate with new flavors while staying committed to small-batch craftsmanship. Now led by the next generation—Dietz, Elle, and Simon Fischer—the business remains Aggie-connected, community-focused, and deeply rooted in family values. As Mark reflects on his journey, he emphasizes gratitude, resilience, and joy in seeing the legacy continue. At its heart, Fischer & Wieser is more than food—it’s about connection, tradition, and creating experiences that last long after the jars are empty."
Texas Monthly - Jun 25, 2025 As Peach Season Gets More Unpredictable, Growers Are Investing in Another Hill Country Industry "Fischer & Wieser’s peach legacy, which began with Das Peach Haus in 1969, has evolved into a cornerstone of Fredericksburg’s food and wine culture. In 2019, Simon Fischer introduced the Fischer & Wieser Culinary Adventure Wine Collection, signaling the company’s expansion into winemaking at a time when Fredericksburg’s wine industry was booming. Partnering with Messina Hof Winery, Fischer & Wieser developed a peach moscato, cofermented from their own peaches and Texas-grown muscat grapes. Simon noted the advantage: unlike fresh market peaches, fruit for winemaking doesn’t need to be perfect in appearance—a resilience against the volatility of peach farming. The family has also embraced distilling: in 2021, Dietz and Elle Fischer launched Dietz Distillery, crafting a peach brandy that requires up to twenty pounds of fruit per small bottle. Despite the high production cost, the spirit complements their heritage and strengthens their peach-focused identity. Together, these ventures ensure that even in years of frost, hail, or reduced harvests, Fischer & Wieser can transform imperfect peaches into value-added products—keeping their legacy alive while adapting to climate challenges. Simon Fischer summed it up best: “It helps us make sense of everything that’s happening in Fredericksburg and cope with all the change.”"
