Founding Story

In 1969, educator and entrepreneur Mark Wieser began selling homemade jams and jellies at a roadside fruit stand called Das Peach Haus, using peaches from his family orchard. In 1979, high school student Case D. Fischer joined the team, later becoming Wieser's business partner in 1986 while attending Texas A&M University. Their partnership transformed the business, leading to the creation of The Original Roasted Raspberry Chipotle Sauce®, which won a NASFT Outstanding New Bestseller in 1997 and put the company on the national stage.

Mark Wieser is a native of Fredericksburg, Texas, and the founder behind Fischer & Wieser (formerly Das Peach Haus®). In 1969, he launched Das Peach Haus as a humble roadside fruit stand, selling peaches grown on his parents’ orchard.

Mark’s connection to the land runs deep: his father planted the family orchard in 1928, and his mother crafted the preserves that would become the brand’s foundational product.

In 1986, Mark formalized his partnership with Case D. Fischer to found Fischer & Wieser Specialty Foods, growing the business from a stand into an internationally distributed line of more than 150 handcrafted specialty foods.

A graduate of Texas A&M University, Mark has also served as a beloved teacher, historian, and former Judge of Gillespie County. Today, he devotes his time to writing, painting, and tending the farm—the pursuits he cherishes most. He continues to lead the organization as Chairman of the Board.

Under his guidance, Fischer & Wieser has evolved into a culinary destination at the F&W Farmstead in Fredericksburg, where guests can engage with cooking classes, sip Dietz Distillery cocktails, taste F&W products, book on-site lodging, and experience the company’s Texas Hill Country heritage firsthand.

Case D. Fischer, co-founder and CEO of Fischer & Wieser Specialty Foods, was inducted into the Specialty Food Association Hall of Fame in 2025, honoring his more than four decades of leadership in the industry.

Case’s journey on the farmstead began in 1979 in the orchards of Fredericksburg, Texas, working alongside mentor Mark Wieser at Das Peach Haus. That early experience inspired the launch of Fischer & Wieser, which grew from a local farm stand into an internationally recognized brand. Under Case’s leadership, the company pioneered innovations like The Original Roasted Raspberry Chipotle Sauce® and expanded into retail, foodservice, private label, and co-packing—all while remaining rooted in artisanal quality.

A proud family business, Fischer & Wieser now includes the next generation of Fischers in leadership roles. Case is also known for mentoring up-and-coming food entrepreneurs and serving on multiple Specialty Food Association committees and its board of directors.

In his hometown of Fredericksburg, Case has served as Chairman of the Admiral Nimitz Foundation and President of both the Chamber of Commerce and Shopkeepers Guild. He continues to champion innovation, community, and excellence in food.
