Jack Goes Single
An American Single Malt is the latest from the Jack Daniel Distillery, using a 100% malted barley mash bill that is ground, fermented, and distilled in Lynchburg, Tennessee. The special whiskey is charcoal-mellowed and then aged in new, charred American oak barrels before being finished in Oloroso Sherry Casks. The aroma opens with the scent of banana bread, followed by notes of malt, oak, raspberries, and chocolate. On the palate, expect hints of gains, red fruits, and the Oloroso sherry cask.
Currently only available at select retailers, the secondary market has made this a valuable bottle with bottles trading for as much as $600.

Japanese Spirit
The
Shinozaki Distillery in Asakura, Fukuoka, Japan has been making whiskey since 1922 with their patented Takamine Process, which uses an ancient Japanese mold, koji, to convert starches to sugars in a process similar to malting barley. Unlike malt whiskey where sugars are extracted in a warm water mash before yeast is introduced to start the fermentation, both the koji and yeast are active at the same time in a multiple parallel fermentation. This 100% barley ferment is then double distilled and aged in virgin oak and ex-Bourbon casks. Expect notes of vanilla, black cherry, and melon.
