Details
Sauvignon Blanc grapes were de-stemmed and lightly membrane pressed, not crushed, to avoid
extracting bitter notes from the skins and seeds. The juice was fermented in upright stainless-steel
tanks at low temperatures for 21 days to preserve the bright fruit characteristics, then left on light
lees during maturation. The wine was then filtered prior to bottling.
